Hi. I'm Daniil, a developer based in London. Like many Eastern Slavic migrants, I miss proper blini, syrniki, and kotleta with mashed potatoes. They're hard to find here, and it's not obvious how to make them: the ingredients are completely different. Which cottage cheese works for syrniki here? Why do they fall apart? What can replace suluguni cheese for khachapuri?
